You'll journey deep into the wild, gather alongside visionary and chef of two hatted Biota Dining, James Viles, as he interprets this country into dishes that need to be tasted to be believed, and of course indulge in the creations!
This is creative cuisine inspired by the striking country at Bamurru Plains, on the edge of Kakadu.
The vision for Biota Dining was for James to create a dining destination in regional NSW that supported both local farmers and growers, incorporating seasonal botanicals and drawing on both propagating and gathering for the menu. James' food is produce and technique driven with a close affiliation to nature. And nature is king at Bamurru. Think a remote ten room wilderness lodge where Magpie Geese mingle with Whistling Kites and Agile Wallabies hop right by your safari bungalow. Think a beautiful riverine, paperbark and savannah woodland habitat that are home to some intriguing ingredients which turn out to be refreshingly delicious too!
